Hybrid of the Pinto Bean. These beans get
their name from the way their pods coil around the vines. Their smooth
texture and fresh flavor make them an ideal candidate for a puree. Cook
the beans with bacon or salt pork before mashing them with Dijon-style
mustard and Worcestershire sauce. These beans provide much more flavor
than the pinto beans that they resemble. Can be used in any recipe in
place of Pinto Beans. |
