Soldier Bean - Small Cadet  **Out of Stock**

A New England heirloom also known as the "Johnson Bean." A favorite for New England cooking, soups, stews, and casseroles. The kidney-shaped pale cream colored bean is marked with a dark maroon "soldier" on the eye which remains after cooking. Use in place of white beans or kidney beans in any recipe. The skins tend to split, so simmer gently!

Snowcap

Named for their resemblance to gently sloped, snow-crested mountains, these beans have a tomato-like flavor. They make a wonderful substitute for cannellini. Toss cooked, drained beans, while still hot, with chopped tomato, chopped black olives, fresh basil, olive oil, and red wine vinegar.

Spanish Tolosanas

These purple and tan beauties are versatile. One of the most unusual (and tastiest) uses is in a dish with clams. Add the cooked and drained beans to clams sauteed in olive oil with onions, garlic, cumin seeds, and white wine. Add toasted, ground saffron and salt to taste. Top with chopped parsley.
